Cilantro Lime Grilled Chicken Kabobs

It’s grilling time! These chicken kabobs are packed with cilantro and lime flavor. Make them on the grill an easy, healthy meal.

Yield: 4-6 servings
Prep Time: 40 minutes (includes marinade time)
Cook Time: 10 minutes
Total Time: 50 minutes

INGREDIENTS

  • 2 lbs frozen chicken breasts, thawed (about 3-4 chicken breasts)
  • 1/4 cup olive oil
  • 1 lime, zested and juiced
  • 2 cloves garlic, minced
  • 2 heaping tablespoons chopped cilantro
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • Steamed rice, for serving (Optional)
  • Additional cilantro and lime wedges, for serving

INSTRUCTIONS

  1. Cube chicken into 2-inch pieces and add to a resealable plastic bag.
  2. Add olive oil, lime juice and zest, minced garlic, cilantro, salt and pepper to the plastic bag. Use your hands to work ingredients around so the chicken is uniformly covered.
  3. Chill in the fridge for at least 30 minutes and up to 24 hours.
  4. When ready to cook, pierce chicken cubes onto metal or wood skewers. Discard excess marinade.
  5. Preheat a greased grill to medium high heat.
  6. Grill chicken until slightly charred and chicken is fully cooked through, about 4-5 minutes per side. Adjust heat as needed. Chicken internal temperature should register 160°F on an instant read thermometer.
  7. Serve chicken kabobs immediately with steamed rice, more chopped cilantro, and a squeeze of lime juice.

  3. Thank a veteran: Have you family visit family members or friends that have served. Listen to their experiences. If you do not have veterans close you can take a moment to write letters.
  4. Attend a parade: Some towns have parades on Memorial Day. You can find information for events on city websites.

Red, White, and Bleu Burger

Show your Patriotism with this delicious Red, White, and Bleu Burger!

Ingredients

  • 1 lb. ground beef
  • 1 tbs olive oil
  • t tsp salt
  • 1 tsp pepper
  • 1/2 tsp cumin
  • 1/2 tsp dried basil

For serving

  • 8 slices bacon
  • 8 ounces bleu cheese
  • 2 cups arugula or lettuce
  • 4 toasted buns
  • Dijon mustard

Directions

  1. Combine first six ingredients and separate into four equal sized patties approximately 3/4 inches thick.
  2. Grill the burgers on medium high heat until golden brown and slightly charred on the first side, about 4-6 minutes (depending on how you like your meat.) Flip over the burgers and repeat.
  3. While burger is cooking, cook bacon on a skillet, drain excess grease.
  4. Add bleu cheese to burger 1 minute before finished cooking. Toast buns on grill.
  5. Toss arugula with 2 tsp. of olive oil. Top burger with arugula, bacon, Dijon mustard and any other toppings of choice (tomato, onion, etc.).

  • 1          New York strip steak (about 16 ounces)
  • 1/2       teaspoon salt

  • 8          cups corn tortilla chips
  • 3/4       cup barbeque sauce
  • 2          cups shredded Cheddar cheese
  • 1          large jalapeño pepper, thinly sliced
  • 1/2       red onion, finely chopped
  •             Chopped cilantro, guacamole, salsa and/or sour cream for garnish (optional)

1. Prepare outdoor grill for direct grilling over medium-high heat; line rimmed baking pan with aluminum foil and spray with cooking spray. Sprinkle steak with salt and black pepper. Place steak on hot grill rack; cover and cook 10 minutes or until internal temperature reaches 135° for medium-rare, turning once. Transfer steak to cutting board; tent with aluminum foil and let stand 10 minutes. (Internal temperature will rise to 145° upon standing.) Cut steak into 1/2-inch pieces.

2. Reduce grill heat to medium. Spread chips on prepared pan; top with barbeque sauce, cheese, jalapeño pepper and onion. Place pan on hot grill rack; cover and cook 5 minutes or until cheese melts. Top nachos with steak; cover and cook 1 minute. Makes about 10 cups.

3. Serve nachos topped with cilantro, guacamole, salsa and/or sour cream, if desired.

Gilster-Mary Lee, 8366 North Highway 51, McBride, Missouri, is voluntarily recalling one lot of Full Circle Organic Microwave Popcorn Salted, UPC 36800-40611 at the consumer level because it may contain undeclared milk. People who have an allergy or severe sensitivity to milk run the risk of serious or life-threatening allergic reaction if they consume these products. The only lot involved is Full Circle Organic Microwave Popcorn Salted, packaged in 9.9-oz. cartons which have a Best By date of APR 09 22 N2 (UPC# 36800-40611). Please examine the stock in your stores and backrooms to determine if you have any of this recalled product on hand. Take immediate steps to remove the product from sale and segregate the product from other inventory to ensure that it is not placed back on sale. Pull the product with the Date of APR 09 22 N2 DESTROY the product and enter the quantity pulled for this recall on storelink by 05/28/2021 for full credit.
