Chocolate Covered Strawberry Mini Icebox Cake

Chocolate Covered Strawberry Icebox Cake with layer upon layer of chocolate cookies, whipped cream, chocolate pudding and luscious strawberries make up this insanely simple and delicious no-bake strawberry cake.

Prep time: 5 minutes – Total time: 5 minutes (plus chilling time) – Serves: 6

Ingredients:

  • 1 (3.9-ounce) package Food Club Chocolate Instant Pudding & Pie Filling
  • 18 chocolate sandwich cookies
  • 2 cups chopped strawberries, plus more for garnish
  • 2 cups Food Club Extra Creamy Whipped Topping
  • 1/2 cup mini chocolate chips
  • Fresh mint for garnishI

Directions:
Strawberry Icebox Cake with layer upon layer of cookies, cream, and luscious strawberries make up this insanely simple and delicious no-bake strawberry cake. The fabulous vanilla whipped cream frosting will certainly knock your socks off. If you’ve never tried a no-bake strawberry shortcake cake, you are in for a real treat.

  1. Prepare pudding according to package directions. Place a cookie in the bottom of a small, glass jar. Top with a layer of pudding. Follow with a layer of thinly sliced strawberries and a layer of whipped topping. Repeat layers two more times, ending with whipped topping. Repeat with 5 remaining jars.
  2. Cover jars with plastic wrap and refrigerate for at least 2 hours, or up to overnight.
  3. When ready to serve, garnish with mini chocolate chips, strawberries and fresh mint

Grilled Chicken BLT Pasta Salad

The perfect light spring or summer salad to bring to barbecues or for a light lunch. The ingredients are so fresh and taste amazing together!

Yield: 8 servings – Prep Time: 10 minutes – Cook Time: 20 minutes – Total Time: 30 minutes

Ingredients:

  • 8 oz rotini pasta
  • 1 lb boneless skinless chicken breasts
  • 6 slices bacon
  • 1 tablespoon olive oil
  • 1/2 cup mayonnaise
  • Half lemon, juiced
  • 1 teaspoon Dijon mustard
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon coarse salt
  • 1/4 teaspoon ground pepper
  • 1 cup grape or cherry tomatoes, halved
  • 4 cups loosely packed lettuce

Directions:

  1. Cook pasta in a pot of generously salted boiling water according to package instructions until al dente.
  2. Drain pasta water and transfer to a large bowl. Drizzle with olive oil and stir to coat, to prevent pasta from sticking together. Set pasta aside to cool.
  3. Meanwhile, preheat grill to medium high heat and cook chicken until completely cooked through, and an instant thermometer inserted into the thickest part reads 165°F, about 5-6 minutes per side. Set aside to cool, then chop into 1-inch cubes.
  4. Cook bacon in a foil-lined pan on the grill, or on the stovetop, until crispy, about 4-5 minutes per side. Transfer to a paper towel lined plate to drain, then roughly chop.
  5. In a small bowl, whisk together the mayonnaise, lemon juice, mustard, sugar, and salt and pepper. Taste and adjust seasoning as needed.
  6. Toss the pasta with the dressing, then add the chicken, bacon, and cherry tomatoes. Add lettuce right before serving

Notes: The pasta salad can be served right away, or can be made up to 4 hours in advance. To keep the lettuce fresh and crisp, lettuce should only be added right before serving

Frozen Raspberry Mockaritas

Frozen Raspberry Margaritas – an easy 6 ingredient recipe for the perfect warm weather drink! Raspberries are blended with sherbet, lime juice and seltzer.

Prep time: 5 minutes – Cook time: 0 minutes – Serves: 6

Ingredients:

  • 2 cups Food Club Raspberry Sherbet
  • 2 cups Food Club Frozen Red Raspberries
  • 1 cup ice
  • 1/4 cup lime juice
  • 2 cups Food Club Lemon Lime Seltzer
  • Kosher salt
  • Fresh raspberries, for garnish
  • Lime wedges, for garnish

Directions:

  1. Combine sherbet, frozen raspberries, ice and lime juice in a blender and blend until smooth.
  2. Transfer to a serving pitcher and stir in seltzer. Chill until ready to serve.
  3. If desired, rim glasses with kosher salt. Fill glasses with frozen mockarita mixture and garnish with lime wedges and fresh raspberries. Serve immediately.

Culinary Tours® Miso Soup

Enjoy this simple and healthy Japanese Miso Soup with the ease of Culinary Tours® Miso Broth.

Ingredients

  • 1 Carton (32 oz.) Culinary Tours Miso Broth
  • 1 Cup baby spinach leaves
  • 1/2 cup carrot, shredded
  • 6 oz. extra-firm tofu, cut into 1/2 inch cubes

Directions

  1. In a medium saucepan, bring broth to boil over high heat. Reduce heat to medium-low, add carrots.
  2. Cook 2 to 3 minutes. Add spinach and tofu; continue cooking just until spinach is wilted and tofu is heated through, about 1 to 2 minutes. Serve immediately. Makes 4 servings.

  • 1/2 (8-ounce) package cream cheese, softened
  • 3 tablespoons powdered sugar
  • 8 slices cinnamon raisin bread
  • 4 strawberries, hulled and thinly sliced plus additional for garnish (optional)
  • 2 large eggs
  • 1 cup whole milk
  • 2 tablespoons unsalted butter
  • 1/2 cup whipped topping, thawed if necessary
  • Maple syrup for serving (optional)

Directions:

1. In medium bowl, with mixer on medium-high speed, beat cream cheese and sugar 2 minutes or until light and fluffy.

2. Spread 4 slices of bread with cream cheese mixture; top with strawberries and remaining 4 slices bread. In large bowl, whisk eggs and milk.

3. On griddle or in large nonstick skillet, in batches if necessary, melt butter over medium heat; dip sandwiches in egg mixture to coat, allowing excess to drip off, place on griddle and cook 5 minutes or until golden brown and heated through, turning once.

4. Serve French toast topped with whipped topping and syrup, if desired, garnished with strawberries, if desired.

Serving size: 1 French toast, 2 tablespoons whipped topping
