1 can coconut milk
1/2 cup jasmine rice
1/2 cup sugar
In a medium sauce pan, cook the jasmine rice according to package instructions.
In a separate sauce pan, bring the coconut milk and sugar to a boil. Turn down to a simmer and let simmer until slightly thickened.
While the rice and coconut sauce are cooking, slice your fresh mango.
To assemble, first place the rice, then the mango, and top with the reduced coconut sauce. Enjoy!
