Pumpkin Crumb Dessert

Take your favorite traditional pumpkin flavor and get a new dish in this Pumpkin Crumb Dessert.

What You Will Need:

  • 1 can pumpkin (29 oz)
  • 3 eggs
  • 1 can evaporated milk
  • 1 cup sugar
  • 1/2 tsp. salt
  • 2 tsp. pumpkin pie spice
  • 1 box yellow cake mix
  • 1 cube margarine or butter (1/2 cup)

What You Do:

  1. Pre-heat oven to 350 degrees
  2. Mix pumpkin, eggs, evaporated milk, sugar, salt and pumpkin pie spice together 
  3. Pour into greased 9×13 inch pan
  4. Sprinkle cake mix on top
  5. Melt margarine or butter
  6. Drizzle melted margarine over top 
  7. Bake for 1 hour or until toothpick comes out clean

Marbled Pumpkin Cheesecake

Change it up this holiday season with swirl of festive pumpkin and creamy cheesecake.




  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup pecans, finely chopped
  • 2 Tbsp. sugar
  • 2 tsp. cinnamon
  • 6 Tbsp. butter, melted


  • 3-8 oz. packages cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 1/2 tsp. vanilla
  • 4 eggs
  • 1/2 cup brown sugar
  • 1 1/2 cup canned pumpkin
  • 1 1/2 tsp. pumpkin pie spice



  1. Preheat oven to 350 degrees. 



  1. In a medium bowl, mix together the graham cracker crumbs, pecans, sugar, cinnamon and butter. 
  2. Press into the bottom and up part of the sides of a 9 inch springform pan. 
  3. Set aside.



  1. In a medium mixing bowl, mix together the cream cheese, granulated sugar, vanilla until smooth. 
  2. Mix in eggs until well blended. 
  3. Set aside 1 cup of this mixture. 
  4. Blend in 1/2 cup brown sugar, pumpkin and pumpkin pie spice into the remaining mixture. 
  5. Pour batter into prepared crust. 
  6. Drop spoonfuls of the plain batter onto the top. 
  7. Swirl with a knife to create a marbled effect.
  8. Bake 1 hour 15 minutes, or until filling is set. 
  9. Let cool for 10 minutes and run a knife around the edge of the pan. 
  10. Chill for 6 hours before serving.
OPTION: If you don’t have pumpkin pie spice substitute with 3/4 tsp. cinnamon and 1/4 tsp. nutmeg.

Apple-Pecan Tenderloin Medallions

Try something a little sweet for dinner with these Apple-Pecan Tenderloin Medallions.


What You Will Need:

  • 1   Farmland® ALL NATURAL* Pork   Tenderloin
  • Garlic pepper, amount will vary
  • 2   tablespoons butter
  • 1   large apple, peeled and thinly sliced
  • 1/4   cup brown sugar 
  • 1/2   cup chopped pecans, toasted

What You Do:

  • Cut tenderloin into 1/2-inch thick slices; sprinkle with garlic pepper.
  • Melt butter in large skillet over medium-high heat until it sizzles. 
  • Reduce heat to medium. 
  • Arrange pork slices in skillet. 
  • Cook for 2 minutes; turn slices.
  • Spoon apples over pork. 
  • Sprinkle with brown sugar and pecans. 
  • Cover and cook for 4 to 6 minutes more until internal temperature reaches 150 F.

Balsamic Rosemary Pork Loin with Roasted Potatoes

All your Thanksgiving leftovers are gone so change it up with some delicious Balsamic Rosemary Pork Loin with Roasted Potatoes.


What You Will Need:

  • 2 1/2 lb. Farmland® Boneless Center Cut Pork   Loin
  • 1 1/2 cups fresh rosemary
  • 8 cloves garlic
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons black pepper
  • 1 teaspoon salt
  • 2 lb. small red potatoes, quartered

What You Do:

  1. Heat oven to 450 F. 
  2. Combine rosemary, garlic, oil, vinegar, pepper and salt in food processor bowl
  3. Pulse to make a coarse wet paste, scraping down the bowl as necessary
  4. Spread 3/4 of paste on all sides of roast 
  5. Place roast, fat side up, in shallow roasting pan large enough to hold roast with 3 inches room around all sides 
  6. Roast 20 minutes.
  7. Meanwhile, in a large bowl, toss together potatoes and remaining paste
  8. Reduce oven to 350 F. 
  9. Add potato mixture to pan, arranging potatoes around roast. 
  10. Continue roasting 40 to 45 minutes, tossing potatoes halfway through, until internal temperature of roast reaches 150 F. and potatoes are tender.
  11. Remove roast from oven and let stand 15 minutes before slicing to serve.
