Avocado Pasta Salad

Don’t knock it before you try it. This avocado pasta salad is the vegetarian dish of your dreams. Get the recipe below!

Ingredients:

1 bag/box of fusilli (spiral) veggie noodles

2 avocados

Cherry tomatoes

Feta cheese (crumbled)

Italian dressing

Olive oil (optional)

Instructions:

Fill a medium to large sauce pot with water and bring to a boil. Cook the veggie pasta according to box instructions.

While pasta is cooking, slice up your fresh avocados and cherry tomatoes.

Once pasta is finished cooking, strain and place into a salad bowl. Add a dash of olive oil if desired to prevent the noodles from sticking while you prep the rest of your ingredients.

Add in the avocado and cherry tomatoes. Then coat with Italian dressing and mix all the ingredients. Top with crumbled feta cheese.

Serve your colorfully delicious pasta salad, and enjoy a unique twist on a favorite meal!

Add these buffalo cauliflower tacos to your recipe line up and you’ll want to make every night taco night. Vegetarian lovers, rejoice!

Ingredients:

1 head of cauliflower

2 tsp garlic powder

1 tsp salt

1/4 cup hot sauce

2 tablespoons butter, melted

10 flour tortillas (or use butter lettuce)

Shredded lettuce

1/4 cup blue cheese or ranch dressing

Cilantro

Optional lime, avocado, tomatoes, or more!

Instructions:

Preheat your oven to 425 degrees.

Slice the cauliflower in half and pull apart bite sized florets and trim bottoms if necessary or desired.

In a large bowl mix garlic powder, salt, melted butter and hot sauce. Toss cauliflower florets in mixture.

Line a baking sheet with aluminum foil or parchment paper. Spread your seasoned cauliflower in a single layer and bake for up to 40 minutes. At the 20 minute mark, be sure to mix them to ensure even baking and flavor coating.

Heat your tortillas, slice your butter lettuce, and assemble your tacos with the toppings of your choice!

Vegetarian Meatballs

Try this tasty spin on a classic.

  • Vegetable oil
  • 1 cup Augason Farms Beef Flavored Vegetarian Meat Substitute, prepared and drained
  • 1/2 cup Augason Farms Potato Gems, prepared
  • 1 tsp onion powder
  • 1 tsp garlic granules
  • 2 Tbsp Augason Farms Dried Whole Egg Powder

In a medium sized bowl, combine meat, potato gems, onion, garlic and egg powder. Mix together until well combined. Shape into 1 inch balls, fry in oiled skillet until all sides are golden brown, about 15 minutes. Makes approximately 16 meatballs.
