Instant Pot Pork Carnitas Tacos

Prep: 15 minutes • Pressure Cook/Broil: 40 minutes • Serves: 10

Ingredients

  • 4 garlic cloves, smashed
  • 1 boneless center-cut pork loin, cut into 2-inch pieces (about 5 pounds)
  • 2 teaspoons dried oregano
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon kosher salt
  • 1 teaspoon orange zest
  • ½ teaspoon ground black pepper
  • 1 cup coconut oil
  • 20 (6-inch) corn tortillas, warmed
  • Toppings: chopped avocado, chopped fresh cilantro, pico de gallo, sliced radish, sliced jalapeño, queso fresco, lime wedges (optional)

Recipe

1. Set 6-quart Instant Pot to Meat. In large bowl, toss garlic, pork, oregano, cumin, chili powder, salt, zest, pepper and oil; transfer to Instant Pot.

2. Place lid on Instant Pot and seal vent; pressure cook on high 35 minutes. Quick release pressure; let stand 15 minutes. Remove lid; with 2 forks, shred pork.

3. Preheat broiler to high. Transfer shredded pork to rimmed baking pan; broil 5 minutes or until crisp and browned. Makes about 9 cups.

4. Serve carnitas in tortillas with toppings, if desired.

Serve carnitas in sandwiches with your favorite toppings.

Cranberry Citrus Pork Loin

Switch it up this Thanksgiving and serve this cranberry citrus pork loin. Though it is not the traditional turkey, it still has all of the flavors you know and love.

Ingredients:

1 pork loin

1 orange, sliced

4-5 fresh Rosemary Spring

1 tbsp. oregano

1 tbsp. garlic powder

1/3 tsp. salt

1/2 tbsp. pepper

Instruction:

Pre-heat the oven to 350 degrees and line a sheet tray with foil.

Mix oregano, garlic powder, salt and pepper in a small bowl.

Rub the spice mixture into the pork loin.

Heat a large stock pot over high with 1 tbsp. of oil in the bottom. Brown each side of the pork loin.

Place the orange slices and rosemary in on the bottom of the sheet pan and the pork loin on top. Roast in the oven for 25-30.

Let rest for 5-10 minutes before serving.

Rosemary-Garlic Rubbed Pork Roast

Prep: 15 minutes plus standing
Roast: 1 hour 15 minutes • Serves: 8

               Nonstick cooking spray

1            package (2/3 ounce) fresh rosemary, leaves removed and coarsely chopped (about 3 tablespoons)

5            medium garlic cloves, finely chopped

2            tablespoons Dijon mustard

1            tablespoon honey

1            tablespoon olive oil

1½        teaspoons kosher salt

1½        teaspoons fresh ground black pepper

1            (3-pound) tied boneless pork loin roast

1. Preheat oven to 450°. Line 13 x 9-inch roasting pan with aluminum foil; spray with nonstick cooking spray. In small bowl, combine remaining ingredients except pork. Rub pork with garlic mixture and place in prepared pan.

2. Roast pork 15 minutes. Reduce oven temperature to 350° and roast 1 hour to 1 hour 10 minutes longer or until internal temperature reaches 140°. Transfer pork to cutting board and let stand 15 minutes before slicing (temperature will rise to 145°).

Ancho Cherry Pork Loin

2 lbs. Smithfield® Boneless Pork Loin

2 (10-oz.) jars cherry preserves

2 cups dry red wine

1/2 cup apple cider vinegar

2 tbs. molasses

2 cloves garlic, minced

2 tsp. ground ancho chile powder

 

  1. Heat oven to 375°F. Place pork in shallow pan; season with salt and pepper. Roast for approximately 1 hour until internal temperature reaches 150°F.
  2. Meanwhile, whisk together cherry preserves, wine, vinegar, molasses, garlic and ancho chile in medium saucepan; season with salt and pepper to taste. Bring to a boil over medium-high heat; reduce temperature to simmer. Simmer 20 to 30 minutes or until slightly reduced and thickened, stirring occasionally.
  3. During last 10 minutes of pork cooking, generously brush ancho cherry sauce onto pork, reserving some sauce for serving.
  4. Remove pork from oven, let rest about 10 minutes. Brush more sauce on pork; carve pork into slices. Serve with remaining sauce.

Makes: 6 to 8 servings
