Loaded Pizza Chicken Breasts

A tasty twist on your traditional Friday pizza night! Try out this savory pizza chicken dinner packed with protein and flavor.

Prep: 20 minutes   Roast: 15 minutes   Serves: 4

INGREDIENTS

  • 4 slices applewood smoked bacon, chopped
  • ½ (8-ounce) package sliced white mushrooms
  • 1 green bell pepper, chopped
  • 1 teaspoon Italian seasoning
  • 4 boneless skinless chicken breast fillets, thawed if necessary
  • ½ cup marinara sauce
  • ¼ (16-ounce) package fresh mozzarella cheese, shredded

RECIPE

  1. Preheat oven to 400°; line rimmed baking pan with aluminum foil. In large skillet, cook bacon over medium-high heat 7 minutes or until crisp, stirring frequently; with slotted spoon, transfer to paper towel-lined plate.
  2. Remove and discard all but 1 tablespoon drippings remaining in skillet; add mushrooms, pepper and seasoning. Cook vegetables over medium-high heat 5 minutes or until tender, stirring occasionally; stir in bacon. Makes about 1½ cups.
  3. Place chicken breasts between plastic wrap on cutting board; with flat end of meat mallet, pound to ½-inch thick. Remove plastic wrap; transfer chicken to prepared pan. Top chicken with sauce, cheese and bacon mixture; roast 15 minutes or until internal temperature reaches 165° and cheese is melted.

  • 1 bottle or can (12 ounces) beer such as lager, pale ale or IPA, at room temperature
  • 2/3 cup pizza sauce
  • 2 cups favorite shredded cheese
  • Optional toppings: chopped/sliced bell pepper, black olives, cooked bacon, mushrooms, onion, pickled jalapeños, roasted red peppers and/or tomato; pepperoni

Recipe

  1. Preheat oven to 450°; brush 2 cookie sheets with oil. In large bowl, whisk flour, baking powder, sugar and salt; gradually add beer to flour mixture, stirring after each addition until incorporated.
  2. On lightly floured work surface, knead dough 1 minute or until smooth and elastic. Divide dough into 2 equal pieces; with rolling pin, roll out each into a 10-inch circle and transfer to prepared cookie sheets.
  3. Bake crusts 5 minutes; top with sauce, cheese and optional toppings, if desired. Bake pizzas 15 minutes or until cheese melts and crust is golden brown. Cut each pizza into 8 slices.

Prepared dough can be frozen by individually wrapping each dough piece with plastic wrap and freezing for up to 2 months; thaw dough in refrigerator overnight and bring to room temperature before rolling out, topping and baking.

Fruit Pizza

They say you can’t have it all, but they’re wrong when it comes to this Fruit Pizza.

Ingredients:

  • 1 package of ready-to-bake sugar cookies
  • 8 oz. cream cheese, softened
  • 1/3 cup sugar
  • 1/2 tsp. vanilla
  • 2 kiwi, peeled, halved, and sliced
  • 1 cup strawberries, halved
  • 1 cup blueberries
  • 1/2 cup honey

Directions:

Spray 12-inch pizza pan with non-stick spray. Press cookie dough evenly onto pan. Bake according to package.

Mix cream cheese, sugar, and vanilla in a bowl until fluffy. Spread evenly over cooked and cooled cookie dough. Top with fruit and honey. Chill for 1 hour before serving.
