Strawberry Banana Smoothie

Strawberries and bananas are the perfect blend for your morning.

Ingredients:

  • 1 bag (10 oz.) Full Circle Organic Frozen Strawberries
  • 3 small to medium ripe bananas
  • 1 cup strawberry banana yogurt
  • 1 cup Full Circle Organic Coconut Milk
  • 2 tablespoons Full Circle Organic Honey

Directions:

Combine strawberries, bananas, yogurt, milk and honey in a large blender container. Cover and blend on low until strawberries are chopped, increase speed and blend until smooth.

Yield: 4 servings

Garden Fresh Red Potato Salad

Nothing says warm weather like a delicious and zesty potato salad.

What you’ll need:

  • 2 pounds small red potatoes
  • 1 tablespoon Full Circle Sea Salt
  • 2/3 cup thinly sliced Full Circle Organic Celery
  • ½ cup shredded Full Circle Organic Carrot
  • 1/3 cup finely chopped red pepper
  • ½ cup Full Circle Organic Green Onions, chopped
  • ½ cup chopped Full Circle Organic Parsley
  • ¼ cup Full Circle Organic Extra Virgin Olive Oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Full Circle Organic Dijon Mustard
  • 1½ teaspoon Full Circle Frozen Chopped Garlic
  • ½ teaspoon ground Full Circle Mixed Peppercorns

Directions:

Cut potatoes into quarters; place in a large pan and cover with cold water, add salt. Bring potatoes to boil over medium heat, boil gently 5 minutes. Shut heat, cover and let stand 5 minutes. Reserve ¼ cup potato cooking liquid. Drain potatoes, do not rinse, transfer to a large bowl. Add celery, carrots and red pepper. Combine green onion, parsley, olive oil, lemon juice, mustard, garlic and peppercorns in small food processor bowl; while processing, drizzle in reserved potato cooking water and process, pulsing until blended. Toss dressing into potatoes and vegetables. Cover and refrigerate at least 1 hour before serving. 8 servings.

Black Bean Salsa

All around goodness with this tasty chip dip.

What you’ll need:

  • 1 (15 oz.) can Full Circle Organic Black Beans
  • 1 (15 oz.) can Full Circle Organic Pinto Beans
  • 1 (15 oz.) can Full Circle Organic Whole Kernel Corn
  • 1 medium Full Circle Organic Red Pepper, chopped
  • 1/2 cup sliced green onion
  • 1/3 cup finely chopped Full Circle organic Cilantro
  • 1 medium jalapeno pepper, seeded, finely chopped
  • 2 teaspoons Full Circle Organic Frozen Chopped Garlic or 1 clove, minced
  • 1 (14.5 oz.) can Full Circle Organic Diced Tomatoes
  • 1 cup Full Circle Organic Italian Dressing
  • 1/2 teaspoon Full Circle Organic Sea Salt
  • Full Circle Tortilla Chips

Directions:

Place black beans, pinto beans and corn in a colander, rinse and drain well. Place beans, corn, red pepper, green onion, cilantro, jalapeno and garlic in a large bowl and toss to combine. Add tomatoes, dressing and salt; toss again until well mixed. Cover and refrigerate at least 4 hours or overnight for flavors to blend. Serve with tortilla chips.

Coconut Lime Cheesecakes

Coconut and lime are a sweet combo in these single serve cheesecakes.

What you’ll need:

  • 1 (7 oz.) package Full Circle Gluten Free Coconut Cookies
  • 6 tablespoons Full Circle Organic Butter, melted
  • 2 (8 oz.) packages cream cheese, softened
  • 1/2 cup Full Circle Agave Nectar
  • 3 tablespoons cornstarch
  • 2 large Full Circle Organic Eggs
  • 1/3 cup fresh lime juice
  • 1 tablespoon grated fresh lime rind
  • 1/2 cup sweetened flaked coconut
  • Sweetened whipped cream

Directions:

Preheat oven to 350 degrees. Place cookies in food processor bowl and process into fine crumbs. Add butter and pulse until crumbs stick together. Line 16 muffin pan cups with papers. Divided crumbs evenly between muffin cups, use the bottom of a glass to press crumbs down to an even layer.

Place cream cheese, agave nectar and cornstarch in large bowl of electric mixer, beat on low speed until smooth, scraping down sides occasionally. Add eggs, 1 at a time, beating on low speed after each until just blended. Add lime juice and rind and beat on low just until smooth, do not overbeat.

Divide cream cheese mixture evenly between muffin cups. Bake 20 to 25 minutes or until set. Cool in pan 10 minutes. Remove to wire rack and cool completely. Spread coconut onto a shallow pan and toast in oven, 5 to 7 minutes, tossing after 4 minutes until lightly browned. Top with whipped cream and toasted coconut before serving.

Blueberry Yogurt Popsicles

Ingredients:

  • 1 2/3 cup Full Circle Organic Frozen Blueberries
  • 1 ½ cup vanilla yogurt
  • 1 ½ tablespoon Full Circle Organic Honey

Directions:

Place 1 cup blueberries, 1 cup yogurt and 1 tablespoon honey in a blender container; process until smooth. Stir together remaining yogurt and honey in a medium bowl; gently fold in remaining blueberries and spoon evenly into bottoms of 6 large popsicle molds. Carefully pour blended blueberry mixture evenly over bottom layers. Insert popsicle stick and freeze until firm, at least 4 hours. 6 servings.

Preparation time: 20 minutes

Freezing time: 4 hours

No-Bake Super Snacks

Ingredients:

  • 2 cups Full Circle Organic Quick Oats
  • 1 cup Full Circle Organic Almond Butter, stirred
  • 2/3 cup Full Circle Honey
  • ½ teaspoon Full Circle Cinnamon
  • 1 cup Full Circle Roasted Salted Almonds, chopped, divided
  • ½ cup dried cranberries
  • ½ cup Full Circle Organic Raisins

Directions:

Combine oats, almond butter, honey and cinnamon in food processor bowl, pulse until blended and holding together. Remove mixture to a large bowl and stir in ½ cup almonds, cranberries and raisins. Cover and refrigerate 30 minutes.

Line a large baking sheet with parchment or waxed paper and shape mixture into 1½-inch balls. Finely chop remaining almonds; roll balls in almonds. Cover and refrigerate another 30 minutes before serving.

Preparation Time: 20 minutes

Cooking Time: 1 hour

Yields: 3 dozen

Asiago Crusted Zucchini & Yellow Squash

  • 2 medium zucchini
  • 1 medium yellow squash
  • ¾ cup grated asiago cheese
  • ½ teaspoon Full Circle Organic Oregano
  • ¼ teaspoon Full Circle Organic Garlic Powder
  • ¼ teaspoon freshly ground Full Circle Organic Pepper
  • 1½ cup Full Circle Organic Marinara Sauce

Preheat oven to 425 degrees.  Line a large baking sheet with parchment paper, lightly coat paper with nonstick cooking spray. Cut zucchini and yellow squash into ¼-inch thick slices.  Arrange slices in a single layer on baking sheet.  Combine asiago cheese, oregano, garlic powder and pepper; sprinkle onto zucchini and yellow squash slices.  Bake 15 to 20 minutes or until cheese is golden brown. checking for doneness after 12 minutes.  Meanwhile heat marinara sauce in a small saucepan.  Serve zucchini and yellow squash slices with sauce.  6 servings.
