Got a major fry craving? Substitute these baked zucchini fry for a healthier alternative. The crunchy flavor and bread crumb coating make for a perfect guilt-free snack!

Ingredients:

2 cups Food Club® Panko Bread Crumbs

2-3 Large Zucchini

1 cup Food Club® Parmesan Cheese

1 1/2 tsp Italian Seasoning

1 tsp Garlic Salt

3 Large Food Club® Eggs

1/2 Cup Melted Food Club® Butter

Instructions:

Preheat your oven to 450 degrees. Line a baking sheet with aluminum foil or coat liberally with butter/cooking spray.

Slice the ends off the zucchini, then cut them in half. Take each half and slice them into 1/2 inch thick wedges.

Combine panko bread crumbs, parmesan cheese, Italian seasoning, and garlic salt into a large plastic seal-able bag. Melt butter in a bowl, and combine with three large eggs. Dip zucchini pieces into the mixture and place three to four pieces into seasoning bag mixture.

Shake them in the bag until they are well coated. Then transfer them to the baking sheet and set aside. Repeat the steps until all your pieces are prepped for baking.

Bake for 18-20 minutes, until they are golden brown and crisp. Keep an eye to keep them from getting too mushy. Rotate pieces midway to ensure both sides evenly brown.

Add additional seasoning after they are finished cooking for more flavor. And pair with your favorite dipping sauce.

Preheat the oven to 450°F and line a large baking sheet with aluminum foil.

Taco Shells

Chicken (substitute with beef, pork, or mushrooms for a vegetarian version)

Tomatoes

Corn

Avocado

Instructions:

Preheat your oven to 350 degrees and place taco shells on a baking sheet as you wait for it to warm. Heat a skillet over medium to high heat with some olive oil and add sliced chicken.

While chicken is cooking, slice your additional taco ingredients. Dice tomato, avocado, red onion, mushrooms, etc. to your liking. Add in your sliced ingredients and mix until cooked (if you prefer them raw, you can add them as is).

Add in your choice of Culinary Tours street taco sauce and cook chicken/ingredients to marinate in the flavor. Make sure your meat is cooked through before removing from heat.

Put your taco shells in the oven and bake until they are crisp and browned (around 5-10 minutes).

Fill your taco shells with all the taco fixings, and top with fresh cilantro and a drizzle of sour cream. Mix in the taco sauce with sour cream for a topping as well. Elevate the flavor to your liking.

Ingredients:

Nonstick cooking spray

3 teaspoons olive oil

2 garlic cloves, unpeeled

½ small red onion, cut into ¼-inch-thick slices (about 1 cup)

½ teaspoon plus 1/8 teaspoon kosher salt

1 pinch ground black pepper

4 medium ripe avocados

1 small jalapeño pepper, stem end trimmed

3 tablespoons fresh lime juice

1 medium tomato, diced (about 1 cup)

1 tablespoon chopped fresh cilantro leaves

Instructions:

Preheat oven to 400°; spray rimmed baking pan with nonstick cooking spray. From 1 teaspoon oil, coat garlic with oil and place on prepared baking pan; in small bowl, toss onion with remainder of 1 teaspoon oil, 1/8 teaspoon salt and pepper. Spread onion in single layer on prepared baking pan and roast 10 minutes; stir onions.

Cut each avocado lengthwise in half around seed. Twist halves in opposite directions to separate. Slip spoon under seed to remove and discard. With large spoon, remove avocado flesh in whole pieces; cut each piece lengthwise in half and add to baking pan, cut side up. Drizzle avocado and coat jalapeño pepper with remaining 2 teaspoons oil; add jalapeño to baking pan. Roast 15 minutes longer, turning jalapeño and rotating baking pan halfway through roasting.

Transfer avocado to same bowl; add lime juice and remaining ½ teaspoon salt. When cool enough to handle, squeeze garlic from skins into bowl. With fork, mash avocado until mixture is slightly chunky. Dice onion and finely chop jalapeño; fold tomato, cilantro, onion and jalapeño into avocado mixture. Refrigerate at least 1 hour or up to overnight before serving.

Ingredients:

1 bag/box of fusilli (spiral) veggie noodles

2 avocados

Cherry tomatoes

Feta cheese (crumbled)

Italian dressing

Olive oil (optional)

Instructions:

Fill a medium to large sauce pot with water and bring to a boil. Cook the veggie pasta according to box instructions.

While pasta is cooking, slice up your fresh avocados and cherry tomatoes.

Once pasta is finished cooking, strain and place into a salad bowl. Add a dash of olive oil if desired to prevent the noodles from sticking while you prep the rest of your ingredients.

Add in the avocado and cherry tomatoes. Then coat with Italian dressing and mix all the ingredients. Top with crumbled feta cheese.

Serve your colorfully delicious pasta salad, and enjoy a unique twist on a favorite meal!

Ingredients:

½ cup quinoa

4 zucchini (about 3 pounds), stems trimmed and cut lengthwise in half

1 pound Italian sausage, casings removed if necessary

1 small onion, chopped

1 package (8 ounces) finely shredded mozzarella cheese (2 cups)

½ cup julienne cut sun-dried tomatoes with Italian herbs, drained

½ cup panko breadcrumbs

2 tablespoons fresh lemon juice

1½ tablespoons chopped fresh oregano leaves

2 teaspoons lemon zest

1 tablespoon extra virgin olive oil

½ teaspoon salt

½ teaspoon ground black pepper

Instructions:

In fine -mesh strainer, thoroughly rinse quinoa with cold water; drain. Prepare quinoa as label directs. With small spoon, leaving about ½-inch wall, scoop out inside portion of each zucchini half; coarsely chop zucchini pulp.

Prepare outdoor grill (or indoor grill pan for desired markings) for direct grilling over medium-high heat. In large skillet, cook sausage, onion and reserved zucchini pulp over medium-high heat 5 minutes or until sausage is no longer pink, breaking up sausage with side of spoon. Remove from heat; stir in 1 cup cheese, sun-dried tomatoes, breadcumbs, lemon juice, oregano, lemon zest and quinoa.

Brush all sides of zucchini with oil; evenly sprinkle with salt and pepper. Place zucchini, cut side down, on hot grill rack (or grill pan); cover and cook 3 minutes or until grill marks appear and edges begin to brown. Turn zucchini and grill 1 minute longer or until lightly browned but still firm; transfer, cut side up, to rimmed baking pan.

Evenly fill zucchini with sausage mixture; sprinkle with remaining 1 cup cheese. Place zucchini, filling side up, on hot grill rack (or grill pan); cover and cook 5 minutes or until zucchini is just tender and cheese is melted and begins to brown.

Ingredients:

2 teaspoons vegetable oil

2 green and/or yellow bell peppers, diced

1 large red onion, diced

6 garlic cloves, minced

2 tablespoons chili powder

1 tablespoon ground cumin

1 teaspoon dried oregano

1¾ pounds 96% lean ground beef

2 tablespoons tomato paste

2 cans (4 ounces each) diced mild green chiles

1 cup salsa verde

1 cup water 1 can (15 ounces) black beans, drained and rinsed

1 can (15 ounces) pinto beans, drained and rinsed

8 teaspoon salt

Optional garnishes: sliced green onions, diced tomatoes and/or chopped fresh cilantro leaves

Instructions:

In large sauce-pot, heat oil over medium heat.

Add bell peppers and onion, and cook 5 minutes or until vegetables begin to soften, stirring frequently. Stir in garlic, chili powder, cumin and oregano, and cook 1 minute.

Increase heat to medium-high. Add beef and cook 8 to 10 minutes or until browned, breaking up meat with side of wooden spoon. Stir in tomato paste and cook 1 minute.

Stir in chiles, salsa and water, and heat to simmering. Reduce heat to medium-low. Cover and cook 10 minutes, stirring occasionally.

Stir in beans and salt. Cook 5 minutes.

Serve chili topped with green onions, tomatoes and/or cilantro, if desired.
