Banana Streusel Muffins

The classic banana bread muffin topped with a crunchy streusel.

What you’ll need:

For the Muffins:

  • 2 cups flour
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1/4 tsp. cinnamon
  • 1 egg
  • 1/2 cup brown sugar, packed
  • 1 tsp. vanilla extract
  • 5 Tbsp. unsalted butter, melted
  • 3 large bananas, mashed
  • 2/3 cup milk

For the Crumb Topping:

  • 1/3 cup brown sugar
  • 1/3 cup sugar
  • 1/4 tsp. cinnamon
  • 1/4 tsp. salt
  • 1/2 cup unsalted butter, melted
  • 1 1/2 cup flour

Preheat oven to 350 degrees F. Line two cupcake tins with liners.

In medium bowl, mix together flour, baking soda, salt and cinnamon.

In large bowl, whisk together the egg and brown sugar until smooth. Add vanilla, butter and bananas. Whisk until combined. Add dry ingredients and mix until combined. Add in milk and stir until combined.  Set aside.

To make crumb topping combine brown sugar, sugar, cinnamon, salt and melted butter in a small bowl. Whisk for a minute or two until sugars dissolve. Mix in the flour. The crumble will be dry.

Use a 1/4 cup measure to fill the muffin liner with batter until about 2/3 full. Sprinkle the crumb topping on top of the batter.

Bake for 16-18 minutes until slightly golden and toothpick inserted comes out clean. Let cool on cooling rack. Enjoy!

Makes 16-20 muffins.

Food Club Strawberry Banana Ice Cream

A guilt free cool down treat full of freshness and flavor. Try out this delicious Food Club favorite.

What you’ll need:

  • 4 cups frozen strawberries
  • 2 frozen bananas
  • 1/2 cup non-dairy milk
  • 1 tsp vanilla
  • 1/4 cup honey

Blend all ingredients in a blender.  Enjoy immediately or place in a bread pan, cover and freeze to enjoy later. Top with chocolate, diced fresh strawberries or sprinkles.

 

Healthy Banana Split

Try this healthy twist on the classic banana split.

 

Ingredients:

1 banana

2 scoops of your favorite yogurt

Optional toppings:

Raspberries

Blueberries

Almonds, cashews, or walnuts

 

Directions:

Slice your banana down the middle so that it looks like an open boat. Fill with yogurt. Top with your favorite toppings. Enjoy!

Mango Banana Smoothie

The perfect tropical combination of mango and banana blended together.

  • 2 mangoes, cut into cubes
  • 1 banana
  • 1 cup coconut milk
  • 1 cup vanilla yogurt, greek yogurt if preferred
  • 1 cup ice

Add all ingredients except ice to blender. Blend until smooth. Add ice and blend for 2 minutes until smooth.

Strawberry Banana Smoothie

Strawberries and bananas are the perfect blend for your morning.

Ingredients:

  • 1 bag (10 oz.) Full Circle Organic Frozen Strawberries
  • 3 small to medium ripe bananas
  • 1 cup strawberry banana yogurt
  • 1 cup Full Circle Organic Coconut Milk
  • 2 tablespoons Full Circle Organic Honey

Directions:

Combine strawberries, bananas, yogurt, milk and honey in a large blender container. Cover and blend on low until strawberries are chopped, increase speed and blend until smooth.

Yield: 4 servings
