Baked Churros

A baked dessert you will find yourself making over and over again.

Churro Dough:

  • 1/2 cup butter
  • 1/2 tsp salt
  • 2 tbsp sugar
  • 1 cup water
  • 1 cup flour
  • 3 eggs
  • 1 tsp vanilla extract

Preheat oven to  350 degrees. Line large cookie sheet with parchment paper. Add butter, sugar, salt and water to medium saucepan. Mix together over medium heat until boiling. Add flour and combine quickly. Stir until dough is completely combined. Remove from heat. Add eggs one at a time and mix well and quickly. Add in vanilla extract. Spoon the dough into pastry bag with large star tip. Pipe dough on parchment paper at any length but leave at least 1 inch in between each. Bake 20-25 minutes or until dark golden brown. Remove from oven and let cool completely. While cooling, mix together sugar coating.

  • 1 tbsp butter, melted
  • 1/4 cup sugar
  • 1/2 tsp ground cinnamon

Mix together sugar and cinnamon and add to a Ziploc bag. Brush baked churros with melted butter. Add a few churros to Ziploc bag and shake in sugar coating until covered. Remove from bag and repeat until all churros are coated in cinnamon sugar mixture. Enjoy!


Baked Garlic Lime Rockfish

  • 2 fillets of 40 Knots Rockfish, Halibut portions or Pollock Fillets (whichever you prefer)
  • celery salt
  • pepper
  • paprika
  • juice of one lime
  • 2 tbsp. olive oil
  • one green onion, sliced, both green and white parts
  • 2 garlic cloves, minced

Preheat oven to 375 degrees. Rinse and pat fish dry. Sprinkle well with salt, pepper and paprika. You should be able to see the seasonings on the fish. Place in oven-proof dish. Drizzle with olive oil and lime juice. Sprinkle with green onion and garlic. Bake for 30 minutes or until fish flakes at the touch of a fork.
