One-Pot Pot Roast

This simple pot roast will have you begging for more… carrots, onions, potatoes galore. It’s a one-pot wonder!

Ingredients

4 lb. boneless chuck roast (marbled)

Kosher sea salt + ground black pepper

3 tbsp. vegetable oil, divided

4 large carrots, cut into 1-inch pieces

1½ lbs. small red or gold potatoes

1 yellow onion, chopped

3 cups beef broth

1 cup water

2 tbsp. aged balsamic vinegar

2 tbsp. Worcestershire sauce

6 cloves roasted garlic, minced

4 sprigs fresh thyme, stems removed

1 tbsp. chopped fresh parsley (optional)

Directions

Preheat your oven to 350 degrees.

Place a large Dutch-oven over medium to high heat and add 2 tablespoons of oil.

Salt and pepper both sides of the roast liberally.  Once the oil is hot, brown the roast for about 5 minutes on each side. Then move to a plate.

Add 1 tablespoon of oil to the pot. Add in onion, potatoes, and carrots.  Cook vegetables for 8-10 minutes, or until they begin to brown.

Add water, balsamic vinegar, beef broth, Worcestershire sauce, thyme, roasted garlic and a few dashes of salt and pepper.

Place roast back in the pot and place over heat. Once it starts to simmer, cover it with the lid and move to the oven.  Roast for up to 3.5 hours, or until tender.

Once cooked, move roast to a cutting board and then tent it with foil.

Let it rest for up to 10 minutes, then garnish with fresh parsley.

Serve and enjoy!

Have a cherry good day with this delicious and easy turnover recipe. Grab some puff pastry and cherry pie filling and you’ll be on your turnover way!

Ingredients:

1 box puff pastry

1 cup cherry pie filling

1 large egg

1 tbsp water

Instructions:

Set oven to 375 degrees.

Slice puff pastry into 8 squares. Add cherry pie filling to the center of each square.

Dip a brush or finger in the water and place around the edges. Then fold in the puff pastry from one corner to the other to create a triangle. Be sure to close the filling inside.

Use a fork to press and seal the edges together, or pinch with your fingers.

Place prepped turnovers onto a baking sheet with parchment paper.

Whisk one egg in a small bowl with water. Then brush on top of each pastry. Sprinkle with sugar (optional).

Bake for about 20-25 minutes until your turnovers are golden brown.

Classic Shirley Temple

Nothing beats the nostalgia of sipping on a refreshing shirley temple. The lemon-lime and cherry flavoring are ‘shirley’ the best way to bring you right back to your childhood.

Ingredients:

1/4 cup lemon-lime flavored carbonated beverage

1 1/2 tbsp grenadine syrup

Cherries

Instructions:

Fill up a tall glass with ice. Then combine the lemon-lime soda with the grenadine syrup. Stir well, and add the cherries on top. Enjoy!

Milk Alternative Ice Cream

Dare we say this ice cream is as delicious as the whole milk option? We think it just might pass the test. Try our milk alternative ice cream recipe for all your dairy-free friends.

Start by picking a non-dairy ice cream base. Here are some of the ones we have tried:

  • Soy Milk
  • Cashew Milk
  • Coconut Milk
  • Almond Milk
  • Macadamia Milk

Note that different milks give different results. Take time to look through the fat content of each type, as ones with higher fat will make a creamier ice cream. In order to control the ice cream flavor best, we recommend getting an unsweetened and plain flavor.

Ingredients:

3 cups unsweetened almond milk

6 large egg yolks

3/4 cup sugar

1/3 cup unsweetened cocoa powder

1/4 tsp xantham gum (optional)

1 1/2 tsp pure vanilla extract

Instructions:

Heat a saucepan over medium heat and combine cocoa powder and half of your almost milk. Whisk consistently until combined. Then add remaining almond milk and bring it to a simmer (stir occasionally). Remove from heat after around 3 minutes.

In a large mixing bowl, add your egg yolks and whisk them until they are light in color. Gradually add sugar while whisking frequently to emulsify the two. Look for a thick mixture that slowly falls from your whisk.

Scoop your warmed cocoa powder and milk mixture in a 1/3 cup and combine with your eggs. Whisk to combine. Add remaining liquid in slowly and gradually, then mix until they are all combined.

If you chose to get xantham gum, you can add it here and mix once more all together to help thicken your ice cream.

Then, add the vanilla extract and mix one final time. Cover your bowl and refrigerate for a minimum of 6-8 hours but preferably over night. Remove once completely cooled.

This is best added to a chilled ice cream container that you have pre-chilled overnight as well.

Serve as a soft serve if eaten quickly, or continue to chill in the freezer for 6-8 hours in a freezer safe container.

Tired of throwing out produce when it’s gone bad? We’ve got 10 tips and tricks to help revive your fruits and vegetables and be sure to give them new life.

  1. Turn those nearly spoiled lemons into lemonade. As you notice your lemons beginning to over ripen, the best thing to do is squeeze them into a refreshing lemonade. Bring that citrus flavor back to life!
  2. If your carrots are nearing the end of their shelf life, make them into carrot chips! Slice the carrots as thin as you can. Line a baking pan with some aluminum foil or parchment paper and add your carrot slices. Throw on your favorite spices, and cook them to your desired crunch level.
  3. Forget to use all of your root vegetables? Throw them together for a delicious veggie filled roast. Take your carrots, beets, turnips and more and roast them to eat with any dish throughout the week. An easy and quick way to ensure you get the most of your veggies.
  4. Asparagus going brown? Simply bake it! We promise with a little time and love it will be back to good and full of nutritious flavor.
  5. Brown bananas? Freeze them and make some banana bread later! Avoid spending more money and buying a loaf when you have bruised bananas that will taste just as sweet as the fresh ones.
  6. Are your berries close to expiring? Make the most of them by preparing your own homemade ice cream. Mix them with yogurt and have yourself a sweet treat much healthier than your other options.
  7. Got a bad apple? Don’t throw it away! Cut out the obvious bruised pieces and clean the remainders well. Then throw them into an American classic, the favorite apple pie. You’ve got your pie… and can eat it too!
  8. Green beans make for a great snack. When you notice they are starting to go bad, clean and cut them down to fit in a jar. Add in salt to taste and some water before leaving them in the fridge for a week or so. You’ve got yourself a good deed and a healthy snack!
  9. Turn your cucumbers into pickles! Pull together your nearly spoiled cucumbers and add them into some jars. Make a mixture of salt and water and add it in. Keep an eye on them, and once you notice the salt and sugar have dissolved, add water and vinegar in even parts. Wait 24 hours minimum before enjoying your homemade pickles!
  10. Don’t let your green and nutrient filled vegetables go to waste! Make sure those green leafy vegetables go to use by adding them to your smoothie mixture. Easy, and delicious!

Ingredients:

1 whole watermelon

16 oz fresh blueberries

Skewers

Instructions:

Slice watermelon into 1 inch thick, vertical slices. Then use a small star shaped cookie cutter to make your shapes. This is possible to achieve from making a star out of a knife, which we wish you luck on this endeavor!

Add about 10 blueberries onto your skewers, and leave a bit of room at the bottom for room to hold.

Add your watermelon star to the top of the skewer and your fruit sparklers are ready to go. Cover and refrigerate for a later snack. Enjoy!

Food Club Tangy Honey Mustard Potato Salad

Enjoy a sweet and savory salad perfect for every gathering. Try out this flavorful Food Club favorite.

What you’ll need:

  • 5 russet potatoes, peeled and boiled
  • 3 hard boiled eggs

Dice potatoes and eggs. Chill and set aside.

  • 1/2 cup mayonnaise
  • 1 TBSP brown sugar
  • 1 TBSP apple cider vinegar
  • 1/4 cup honey
  • 3/4 cup mustard
  • 1 tsp salt
  • 1/2 tsp pepper

Mix all above ingredients in large bowl. Add chilled potatoes and eggs. Mix together and enjoy!

 

Patriotic Ice Cream Sandwich

Creamy Red Button Vintage Creamery ice cream sandwiched between two soft chocolate chip cookies with a touch of red, white and blue. The perfect treat for your patriotic celebrations.

What you’ll need:

  • Red Button Vintage Creamery Vanilla Bean ice cream
  • Chocolate chip cookies, homemade or bakery fresh
  • Patriotic sprinkles

If making homemade cookies, make cookies according to recipe instructions and let cool completely. Once cookies are completely cooled place a scoop of ice cream on the cookie and sandwich between another cookie. Place sprinkles on small plate. Roll edges of ice cream into the sprinkles. Serve immediately.

Sweeten up your day with these delicious peanut butter bars.⠀

Ingredients:

1/2 cup butter

1 cup granulated sugar

3/4 cup brown sugar

1 egg

1 tsp vanilla

1 cup peanut butter

1 tsp baking soda

1/2 tsp salt

1 cup flour

1 cup oats

Instructions:

Cream butter and sugars together. Add vanilla and peanut butter. Mix all dry ingredients together. Spread on greased jelly roll pan. Bake at 325 degrees for 10 minutes (very lightly browned). Let cool for a few minutes, then spread with a thin layer of peanut butter (let the peanut butter melt before spreading). Frost with chocolate icing when cool.⠀

Chocolate Frosting:

1/4 cup margarine (softened)

2 tsp vanilla

1/4 cup milk

1/2 tsp salt

3 cups powdered sugar

2-3 tbsp cocoa

Place all ingredients in a mixing bowl and beat with an electric mixer until smooth and creamy.
