Red, White and Blueberry Trifle

The classic strawberry angel food cake dessert just got a big boost. Try out this delicious and appealing trifle that is sweet to eat but also a beautiful centerpiece for your upcoming holiday bbq or family dinner.

INGREDIENTS

  • Food Club® Angel Food Cake Mix, box
  • Food Club® 3.4 oz box vanilla instant pudding mix
  • 2 cups milk
  • 8 oz. cream cheese
  • 1 cup powdered sugar
  • Food Club® 8 oz. whipped topping
  • 2 pints fresh blueberries
  • 2 pints fresh strawberries, sliced

DIRECTIONS

  1. Prepare Angel Food cake according to directions on box. Let completely cool and cut into small cubes.
  2. Whisk together pudding and milk for approximately 2 minutes in small bowl. Pudding will start to thicken. Set aside.
  3. In large bowl, beat cream cheese until smooth. Gradually add in powdered sugar. Beat until sugar is completely mixed into cream cheese.
  4. Fold pudding mixture into cream cheese mixture until completely combined. Gently fold in whipped topping.
  5. Assemble trifle by alternating layers in this order : angel food cake cubes, blueberries, cream cheese pudding mixture, strawberries. Repeat. Add a final layer of pudding mixture on the top and then finish with a decorative pattern of blueberries and strawberries.
  6. Serve immediately or cover and store in refrigerator until ready to serve. Enjoy!

Backyard Tailgating Tips

Backyard tailgating is at the spotlight this year. You can still enjoy your tailgate party at home and outdoors with family with these tips. Check them out and then take a look at our awesome sales on our weekly ad to save big for your tailgates.

  1. Foods that can be eaten with your hands work best for tailgating. Think chicken, tacos, hamburgers, pulled-pork sandwiches, brats, kebabs, burritos . . . the list could go on and on. Regardless, simple, delicious foods allow you to focus on fun and be less concerned with complicated recipes.
  2. Perform pre-game prep. Chop, slice, and assemble whatever you can beforehand. Store all of your food in waterproof, plastic bags or disposable plasticware.
  3. Food safety is important, especially outside. Have a cold food cooler and a drink cooler. Drink coolers will be opened more frequently, so separate coolers allow food to stay cold longer.
  4. Keep it hot. When food needs to be kept warm, turn a cooler into a hotbox. Warm bricks in the oven, wrap them in foil and place in a cooler lined with wet towels. This will keep your food warm for 2-3 hours.
  5. Keep it short. Don’t let food sit out for more than two hours. If it’s really hot outside, (over 90 degrees) don’t let food sit out for more than an hour.

Spicy BBQ Tri-Tip Sliders with Creamy Avocado Slaw

Prep: 20 minutes plus standing   Grill: 20 minutes   Serves: 6

INGREDIENTS

  • 2¼ teaspoons brown sugar
  • 1½ teaspoons chili powder
  • 1½ teaspoons garlic powder
  • 1½ teaspoons paprika
  • ¾ teaspoon cumin
  • ¾ teaspoon dry mustard
  • ¾ teaspoon salt
  • ¼ teaspoon ground cayenne red pepper
  • 1½ pounds beef loin tri-tip steak
  • ½ large avocado, peeled and pitted
  • 2 teaspoons lemon juice
  • 3 tablespoons mayonnaise
  • ¼ teaspoon celery salt
  • 2 green onions, thinly sliced
  • 1½ cups coleslaw mix
  • 1 package (12 ounces) Hawaiian sweet rolls, split lengthwise
  • 6 tablespoons spicy barbeque sauce

INSTRUCTIONS

  1. In small bowl, stir brown sugar, chili powder, garlic powder, paprika, cumin, dry mustard, salt and cayenne pepper; rub over steak and let stand at room temperature 30 minutes.
  2. Prepare outdoor grill for direct grilling over medium-high heat. Place steak on hot grill rack; cover and cook 20 minutes or until internal temperature reaches 140° for medium-rare, turning once. Transfer steak to cutting board; tent with aluminum foil and let stand 5 minutes. (Internal temperature will rise 5 to 10° upon standing.) Slice steak against the grain.
  3. In large bowl, smash avocado and lemon juice; stir in mayonnaise and celery salt. Fold in onions and coleslaw mix. Makes about 2 cups.
  4. Serve steak in rolls topped with barbeque sauce and slaw mixture.
