Don’t settle for a normal baked potato. Add this stuffed sweet potato side dish into your rotation for a rich, buttery and somewhat healthy delight.
4 sweet potatoes
2 tbs. butter
1 tbs. rosemary, chopped
1 oz. goat cheese
Preheat the oven to 450 degrees.
Place the sweet potatoes on a lined baking sheet and bake until tender (40-50 minutes).
When the sweet potatoes are still hot, cut in half, add 1/2 tablespoon butter to each sweet potato, a pinch of rosemary and goat cheese. Dig in and enjoy this delicious side dish.
