Looking for a quick weeknight meal with a kick? Try these jalapeno popper stuffed pork loin chops (p.s. you can find most of the ingredients for this recipe on sale in our weekly ad).
2 Smithfield Prime Pork Loin Chops
2 jalapenos, diced
1/3 cup cream cheese
1/4 cup cheddar cheese
1 tbs. green onions
Preheat a large roasting pan over medium heat with 1 tbs. olive oil and preheat the oven to 350 degrees.
Slice the pork chops in half leaving a small amount on the edges so that the chop is not sliced all of the way through. Mix the jalapenos, cream cheese, cheddar cheese and green onions together. Stuff the pork chops with the cheese and jalapeno mixture and secure meat with twine.
Place skin-side down in hot roast pan and brown for 2-3 minutes on each side. Transfer to an oven save sheet pan and bake for 20 minutes.
Remove the cooking twine and serve with your favorite sides. Enjoy!
