Labor Day is almost here

Are you looking for ways to celebrate this Labor Day holiday? A family BBQ, a picnic, swimming or going on a hike are fun ways to spend the holiday. With it being the last holiday before the weather changes families will spend time outside cooking their favorite meals. Here are some suggestions for you Labor Day weekend:

Host a BBQ: Perhaps in your backyard with friends and family.

Patriotic theme: Use lots of Use lots of red, white and blue fruits such as watermelon, blueberries or strawberries for your smorgasbord.

Get Outdoors: If the weather is great take a picnic to a pool or splash pad and let the kids enjoy the warm weather. Consider going on a family friendly hike and take your lunch with you. It is always fun to find a place in the mountains or under some trees to eat.

How to pick the perfect watermelon

Labor Day is not only your chance for a last summertime hurrah, it’s also one of the last times you can enjoy delicious, local watermelon. Whether barbequing in the backyard, lounging at the lake, or munching in the mountains, a juicy watermelon, picked at the peak of freshness by a local grower, is a tasty compliment to your activity.

Tips for selecting the perfect watermelon:

  • Look for the yellow bottom. The rough, flat, discolored part is where the watermelon rested against the ground. If this part is green or white, the watermelon wasn’t given enough time to ripen.
  • Pick a heavy one. If a watermelon seems heavier than it should, this is a sign that the watermelon has more water, making it juicier and likely sweeter too.
  • Avoid lumps. Choose a watermelon with a uniform roundness. Lumpy or irregular watermelons can indicate less than ideal growing conditions.
  • Remember, dull is good. Shinny watermelons are typically immature watermelons. Look for a watermelon with a dull, slightly rough exterior.
  • Thump away. While this method can take time to master, knock on your watermelon like it was a door; a tenor, hollow resonance is ideal while deep and dead or high and thin can be signs of a poor melon.

If in doubt, ask your friendly produce associate to cut a melon and give you a sample. Precut watermelon is also available and can be a great way to inspect the watermelon meat to ensure it is juicy, with a deep red color. Be aware, however, that once a watermelon is cut it should be kept refrigerated and eaten as soon as possible, no more than 3-4 days, for best results. Whole watermelons can be stored in the fridge or a cool area for up to a week.

 

Steak Fajita Kabobs

Steak Fajita Kabobs

 

Ingredients:

1 lb sirloin steak, cut into bite-sized pieces

1/2 cup vegetable oil

3 tablespoons lime juice

2 tablespoons chili powder

2 tablespoon garlic powder

1 tablespoon honey

1/2 teaspoon paprika

1/2 teaspoon ground black pepper

salt to taste

1 red bell pepper

1 green bell pepper

1 yellow bell pepper

1 orange bell pepper

1 red onion

 

Directions:

Place steak pieces in a resealable plastic gallon-sized bag.

In a small bowl, mix together vegetable oil, lime juice, chili powder, garlic powder, honey, paprika, and black pepper (and salt if desired). Pour over steak and close bag. Place bag in fridge and let marinate for at least an hour.

 

While the meat is marinading, cut up the peppers and onion into bite-sized pieces. Remove meat from the fridge and discard marinade. Thread meat, peppers, and onion onto the skewers, alternating meat and vegetables.

 

Cook kabobs on the grill over medium-high, about 6-8 minutes each (turning once or twice to make sure that they are evenly cooked). Serve warm and enjoy!

 

Makes 4-5 servings.

This watermelon slush is delicious and super easy to make. A great drink that you can make with your kids that will only take five minutes to make. Not only is it quick and easy to make, but it’s made from actual watermelon with little sugar (compared to other drinks out there).

  • 2 tablespoons sugar
  • Juice of 1 lime, optional

INSTRUCTIONS

  • Combine watermelon, sugar, lime juice and 1 cup ice in blender until smooth.

MDA Summer Camp – Thank You

We would like to thank all of our guests who generously donated to our Shamrock drive. Your donation allowed  children ages 6-17 with muscle disease one week at MDA’s summer camp.

MDA Summer Camp was held at Camp K and included fun and adaptive activities like: horseback riding, swimming, a ropes course, rock climbing, soccer, relay races,  t-ball, crafts, a talent show, dance, and much more.

An over $70,000 donation was made on behalf of Associated Retail Operations (Macey’s, Dan’s, Dick’s Market, Lin’s and Fresh Market Stores) covering camp costs for 87 of the 101 campers.

At MDA summer camp, kids create lifelong friendships, build self-confidence and develop independence. And because of caring friends like you, MDA summer camp continues to make anything possible for kids in an environment where barriers don’t exist – all at no cost to their families.

Thank you for helping us make MDA summer camp a reality for local kids.

Peach Bundt Cake

Peach Bundt Cake

If you’re looking for a delicious dessert and a fun way to use fresh peaches, look no further. This yummy, moist peach bundt cake will keep the kiddos coming back for more. Plus, it’s totally easy! Easy prep, easy bake, easy make!

Ingredients:

Cake-

  • 1 cup butter, softened
  • 2 cups white sugar
  • 6 eggs
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 3 cups all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 1/2 cups diced fresh peaches

Frosting-

  • 1/2 cup butter, softened
  • 1 teaspoon vanilla
  • 2 tablespoons milk
  • 2-3 cups powdered sugar

Directions:

Preheat oven to 350 degrees F. Grease and flour a bundt pan.

In a large bowl, cream butter and sugar together until fluffy. Add eggs, one at a time, mixing after each egg. Add in almond extract, vanilla extract, and sour cream and mix until completely combined.

Add flour, baking soda, baking powder, and salt into the bowl and mix well. Fold in the peaches and carefully pour batter into prepared bundt pan. Bake for 55-60 minutes or until a toothpick stuck into the cake comes out clean.

Let cake cool for 30 minutes before inverting cake onto serving plate.

While the cake cools, prepare the frosting by mixing all frosting ingredients together in a bowl. After the cake has cooled, spoon the frosting on top of the cake and let it run down the sides.

Makes 12 servings.

Prep time: 25 mins

Cook time: 60 mins
