Strawberry Freezer Jam

Your family probably loves peanut butter and jelly sandwiches, so what could make this timeless sandwich even better?  Homemade strawberry jam!  Instead of spending hours crouching over rows of strawberry plants you simply need to stop by your local store and pick up all the delicious ingredients necessary for this easy strawberry freezer jam.

What You Will Need:

  • 3 cups crushed strawberries
  • 3 cups sugar
  • ¾ cup water
  • 1 pkg. dry pectin

What You Do:

  1. Mix crushed strawberries with sugar in a bowl
  2. Let mixture stand for 10 minutes.
  3. In a small saucepan, mix water and pectin.
  4. Bring to a boil stirring constantly.
  5. Boil and stir for 1 minute.
  6. Add the boiling water and pectin into the strawberries and stir to combine well.
  7. Let mixture sit for 3 minutes.
  8. Pour into jars or plastic containers and let sit for 24 hours.
  9. Place in freezer until ready to use.

This class will feature her fantastic burrito recipe among other class favorites.

Thursday, August 28th: Dutch Done Right: Here is a class that is all about the recipes that show off the great taste that can only be done with a Dutch oven. Aaron Preece will be showing his delightful recipes for Sweet Beans and Hearty Potatoes. 

Bacon Roasted Corn on the Cob

Corn on the cob is a delicious summer treat that seems to pair nicely with any meal.  We’ve taken that summer side dish you love and added something you probably love even more….bacon.  Yep, we’ve gone off the deep end and taken corn on the cob and roasted it wrapped in bacon creating a perfect combination of sweet and savory.  Top it off with a dollop of sour cream and a sprinkle of chives and you have a new family favorite. Watermelon Cupcakes

Summer is full of sun, fun and food.  Why not share some adorably delicious cupcakes with your friends and family?  Use this recipe to shock and awe your friends and family with your fun creativity! 

 

What You will Need:

  • 2 2/3 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup water
  • 1/2 cup oil
  • 2 eggs
  • 1 tablespoons vanilla
  • 1/2 cup mini chocolate chips
  •  Red, and Yellow Food coloring

What you Do:

  • Preheat oven to 350 degrees F.
  • Line cupcake tins with cupcake liners.
  • Mix together the flour, sugar, baking powder, and salt.
  • In a separate bowl, beat together the milk, water, oil, eggs, and vanilla with an electric beater on medium speed. Add dry ingredients and continue to beat together on medium speed for an additional 2 minutes.
  • Add eight drops of red food coloring and one drop of yellow food coloring to make your batter watermelon colored.
  • Fold in chocolate chips and pour batter into prepared cupcake tins about 1/2 to 2/3 full. Bake for 20-23 minutes.
  • Allow to cool completely
  • Frost using your favorite buttercream frosting.  Add green food coloring to get the green for your watermelons.

Gluten-Free Conversion

Use 2 1/2 cups gluten free flour blend. Add 3/4 tsp. xanthum gum only if the flour blend doesn’t already contain it.

Buttercream Frosting

What You will Need:

  • 1/2 cup vegetable shortening
  • 1/2 cup butter, softened
  • 1 teaspoon vanilla extract
  • 1 teaspoon butter flavoring
  • 4 cups confectioners’ sugar, sifted
  • 1/4 cup milk (for medium consistency. Use more, if necessary)

What You Do:

In a large mixing bowl, beat together the shortening and butter with an electric mixer. Add the vanilla and butter flavoring. Slowly add the confectioners’ sugar to the shortening mixture 1/2 cup at a time; beating with an electric mixer as you go. After each addition, add 1 tablespoon milk or until you reach the desired consistency. Beat at medium speed until mixture is light and fluffy.

Hint: To save time you can combine all ingredients at once into the mixing bowl. Start beating on lowest speed until well blended. Increase speed to medium and beat for 1-2 minutes until light and fluffy.
