Summer is full of sun, fun and food. Why not share some adorably delicious cupcakes with your friends and family? Use this recipe to shock and awe your friends and family with your fun creativity!

What You will Need:
- 2 2/3 cups all-purpose flour
- 1 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/2 cup water
- 1/2 cup oil
- 2 eggs
- 1 tablespoons vanilla
- 1/2 cup mini chocolate chips
- Red, and Yellow Food coloring
What you Do:
- Preheat oven to 350 degrees F.
- Line cupcake tins with cupcake liners.
- Mix together the flour, sugar, baking powder, and salt.
- In a separate bowl, beat together the milk, water, oil, eggs, and vanilla with an electric beater on medium speed. Add dry ingredients and continue to beat together on medium speed for an additional 2 minutes.
- Add eight drops of red food coloring and one drop of yellow food coloring to make your batter watermelon colored.
- Fold in chocolate chips and pour batter into prepared cupcake tins about 1/2 to 2/3 full. Bake for 20-23 minutes.
- Allow to cool completely
- Frost using your favorite buttercream frosting. Add green food coloring to get the green for your watermelons.
Gluten-Free Conversion
Use 2 1/2 cups gluten free flour blend. Add 3/4 tsp. xanthum gum only if the flour blend doesn’t already contain it.
What You will Need:
- 1/2 cup vegetable shortening
- 1/2 cup butter, softened
- 1 teaspoon vanilla extract
- 1 teaspoon butter flavoring
- 4 cups confectioners’ sugar, sifted
- 1/4 cup milk (for medium consistency. Use more, if necessary)
What You Do:
In a large mixing bowl, beat together the shortening and butter with an electric mixer. Add the vanilla and butter flavoring. Slowly add the confectioners’ sugar to the shortening mixture 1/2 cup at a time; beating with an electric mixer as you go. After each addition, add 1 tablespoon milk or until you reach the desired consistency. Beat at medium speed until mixture is light and fluffy.
Hint: To save time you can combine all ingredients at once into the mixing bowl. Start beating on lowest speed until well blended. Increase speed to medium and beat for 1-2 minutes until light and fluffy.
