  • Tuesday, July 1st @ 7pm: Recipe Rehab: Let’s face it-we all have those recipes that we can’t live without-even if they aren’t healthy for us. Whether it’s Chicken Alfredo, Cheesecake, or those pesky homemade scones-we just can’t help ourselves. The Food Sense Girls are here to rehab those unhealthy temptation foods into healthy delightful ones.
  • Wednesday, July 9th @ 7pm: Strawberry Delight: Pies, jam, shakes, and smoothies are just a few of the foods that strawberries champion with their delicious flavor. Whether you enjoy eating them raw or dipping them in chocolate, you’ll want to check out this class. Relda Sandgran will be sharing a few new recipes that include this delightful red fruit.
  • Tuesday, July 15th @ 7pm: Little Theatre Hall of Fame #3: Although the Little Theatre at our store has been around for years, we are still welcoming new friends to our little group. If you have fallen in love with recipes from our classes held in the old Macey’s Little Theatre, then this class will be one to mark on your calendar. Dawna Webb, our Little Theatre coordinator, will be going through our old recipe books and choosing some of the best of the best recipes to share. ***This class will feature recipes from Rosa Jackson & Relda Sandgran.
  • Wednesday, July 16th @ 7pm: Healthy Chocolate: Most women adore chocolate, but then there’s that annoying guilt that nags at us in the back of our minds because chocolate isn’t the healthiest treat we could be enjoying. But don’t fret! Come discover the benefits of Healthy Chocolate, which will be taught by NayDean Park. She will discuss Healthy Chocolate, how it helps protect the heart, brain, and other body systems, and provides superior antioxidant protection.   • Wednesday, July 30th @ 7pm: Beat the Heat: When it comes to cooking and baking in the summer, we just can’t take the heat of the kitchen on top of the heat streaming through the windows. More often than not, this means that we opt for meals that require no heat, which leaves much to be desired. Thankfully, Alissa Weller knows just what recipes are quick and require little time in that hot kitchen. So if you want to beat the heat-and eat a hearty meal-mark this class on your calendar.

Jiggle Fest

Join Macey’s at Thanksgiving Point for a food festival of jiggly proportions! Come on Saturday, July 19 for a day dedicated to Utah’s favorite food: Jell-O and its lovely cousins: funeral potatoes, fry sauce, and Dutch oven fare.

The festival will be held on Saturday, July 19 from 10 am to 4 pm with Jell-O fights every hour from 10:30 through 3:30 pm with sprinklers at the top of every hour starting at 11 am.

While you are there, show off your Utah food pride and bring your family funeral potatoes, fry sauce, or Dutch oven recipe to compete for awesome prizes including family memberships, admission passes, and more! Learn more

How to make Your Perfect Parfait

Parfaits are a great summer treat and you can even enjoy them as a light meal.  One of the great things about parfaits is that you can create your own parfait and have it be completely personalized.  Parfaits are great to make with kids because they can really put what they want in theirs and you know they will enjoy it Here are some tips to get you started towards your own perfect parfait, but don’t be afraid to deviate from the steps.

Parfait

What You Will Need:

  • Your favorite yogurt whether it’s original vanilla or a variety Greek yogurt pick the best!
  • Mixin’s!  Choose some cut up fruit, granola, cereal or even a tasty jam to make your layers
  • Tall glass

What You Do:

  1. Start off with a layer of yogurt to support the top layers
  2. Add a layer of a mixin’ of your choice
  3. Add another layer of yogurt
  4. Repeat process until your glass is full
  5. Enjoy!

Spicy Watermelon Salad

Summer is filled with barbecues and get together’s with family and friends.  While everyone loves your world famous potato salad, surprise your loved ones at your next pot luck gathering with a dish that will add a little heat to their meal.

Watermelon SaladWhat You Will Need:

• 3/4 cup red wine vinegar
• 1 white onion, sliced into thin rings
• 2 lbs watermelon, cubed
• 1/4 cup lime juice
• 1 jalapeño, halved, seeded, and sliced
• 1 tablespoon chopped fresh basil leaves
• 1 tablespoon chopped fresh mint leaves
• 8 ounces feta, broken into chunks
• 1/2 teaspoon kosher salt
• 1 teaspoon pepper
• 1/4 teaspoon cayenne
*OPTIONAL: You can substitute feta cheese for cojita cheese

Tasty Tip: To add a little more spice to your salad, substitute the jalapeño with a slightly hotter serrano pepper.

What You Do:

  1. Heat vinegar in a small saucepan over high heat until boiling. 
  2. Add onion and cook, turning as needed.  Cook onion until it’s pink and most of vinegar is absorbed, approximately 5 minutes. 
  3. Spoon onion out of pan, let cool slightly
  4. Roughly chop your cooked onion
  5. Mix remaining ingredients in a large bowl. 
  6. Add onion and toss just to combine.

Pork Tenderloin Sliders with Goat Cheese

“Slide” into summer with these delicious pork tenderloin sliders.  Top off these unique little sandwiches with some goat cheese for a truly seasonal culinary delight.

Pork Tenderloin Sliders

What You Will Need:

•1 Smithfield-Farmland® Pork Tenderloin
•1 teaspoon salt-free garlic and herb seasoning
•4 oz. (1/2 cup) soft goat cheese
•1 tablespoon chopped fresh basil
•1 teaspoon lemon juice
•½ teaspoon minced garlic
•Pinch black pepper
•12 mini rolls (1 1/2-x-2-inches), split and toasted
•Roasted red bell peppers
•Field greens

What You Will Do:

•Heat charcoal or gas grill to medium.  Sprinkle all sides of pork with seasoning.
•Grill tenderloin 18 to 25 minutes until internal temperature reaches 150oF.  Let stand 10 minutes before slicing.
•Meanwhile, mix together goat cheese, basil, lemon juice, garlic and black pepper until creamy.  Spread goat cheese on bottom of rolls.
•Thinly slice tenderloin and place on top of goat cheese with roasted red pepper and field greens.  Close roll to serve.

Cajun Grilled Baby Back Ribs

Transport your taste buds to a slice of Southern paradise with this delicious entree.  Add a little Cajun spice to your grill this season with these Cajun Grilled Baby Back Ribs.

Cajun Baby Back Ribs

What You Will Need:
•4 lb. Smithfield-Farmland® Baby Back Ribs
•3 tablespoons Cajun seasoning blend

BBQ Sauce:
•1 cup orange juice
•½ cup barbecue sauce
•½ cup honey
•1 tablespoon Dijon mustard
•2 teaspoons Cajun seasoning blend
•1 ½ teaspoons cornstarch

Preparation:
•Heat charcoal or gas grill to medium.  Season ribs with 3 tablespoons Cajun seasoning.  Grill ribs over indirect heat for 1 1/2 to 2 hours until tender.
•Whisk together all BBQ Sauce ingredients in small saucepan.  Heat to boiling; reduce heat and simmer 10 minutes.
•Brush ribs with sauce during last 30 minutes of cooking, turning frequently.  Serve remaining sauce with ribs.
